Besides mashed and baked, what are some of your favorite ways to prepare potatoes?

I (L) (L) (L) potato salad.

I toss quartered red potatoes with a little olive oil and onion soup mix, then pop them in the oven at around 400 for 20-25 minutes. My picky kids actually like them this way!

I dice up regular potatoes into little squares, mix with some finely minced onion, a little pepper, salt and garlic powder, then wrap in foil and throw onto the grill until they are soft but browned on the outside. Soooooo delicious!

I like to make au gratin potatoes with a cheddar and velveeta cheese sauce.

Hasbrowns!

I make a dish called Greek Lemon Chicken and Potatoes, and these are my favorite potatoes of all time.....

Throw your boneless chicken breasts in a baking dish, cover in salt, pepper, and oregano, drizzle with olive oil. Fill the rest of the pan with a little more olive oil and a bunch of lemon juice (however much you'd like!) Stick it in the oven at 350 degrees. Chop your potatoes, deep fry them in whatever oil you choose until they have a nice brown color, then transfer them to the already baking chicken dish...... use a turkey baster to squeeze some lemon juice/oil over them.... continue to bake for 20-30 minutes depending on how much you're making and voila! Perfection!

I love to make Augratin Potatoes - they just are not a quick dinner option though...I usually would save that for the weekend.

My husband absolutely LOVES Mashed Potatoes. I could make Mashed Potatoes every night, and he would be happy :)

Yeah, the Au gratin are SO yummy but they take SO Long to make, so I don't make them very often. It's so much easier and pretty much costs the same to grab a box of the bettry crocker augratin... but then I don't feel as accomplished :lol

It's the opposite at our house with the mashed taters... Jason likes them but he won't eat them often. I'm the one who LOVES them. I could eat them with almost anything, every single day. They aren't good for me though so I don't eat them much. I remember when I had them one night and my fasting blood sugar levels the next day were like 160, like double what they should be :lol :insomnia

Roasted. I am obsessed with roasting everything. A touch of olive oil and spice.

It really is... when I'm cooking for more "cultured" eaters (ie. not my husband and son) I serve it with a big bowl of greek salad topped with homemade dressing and feta cheese, and a smaller bowl of mixed Kalamata olives which are to die for.

Yummy! I (L) potatoes!

-I take a bunch of russets, cut them in quarters
-Boil them for about 15 minutes, until fork tender
-Drain and mix them with olive oil, garlic salt, pepper, and basil
-Then grill them until crispy!

My mouth is watering...
